Mini Loaded Potato Bites
Ingredients:
*1 lb baby potatoes (choose small, similar-sized potatoes)
*2 tbsp olive oil
*Salt and pepper, to taste
*1/2 cup shredded cheddar cheese
*1/4 cup sour cream (for topping)
*2 tbsp chopped chives (for garnish)
*Optional: crumbled bacon or cooked pancetta for extra flavor


Instructions:

  1. Preheat Oven: Set your oven to 400°F (200°C).
  2. Prepare Potatoes: Wash the baby potatoes and pat them dry. Place them on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper, then toss to coat.
  3. Bake: Roast the potatoes in the oven for 20–25 minutes or until they are soft and golden brown on the outside.
  4. Smash Potatoes: Carefully take the potatoes out of the oven. Use the back of a spoon or a potato masher to gently press down on each potato, flattening them slightly without breaking them apart.
  5. Add Cheese: Sprinkle shredded cheddar cheese over each smashed potato.
  6. Bake Again: Return the potatoes to the oven and bake for another 5–10 minutes or until the cheese is melted and bubbly.
