Pasta with Spinach and Tuna


Ingredients:
*300 g (10 oz) pasta (such as fusilli or penne)
*2 tablespoons olive oil
*3 cloves garlic, minced
*1 can (400 g/14 oz) tuna in olive oil, drained and flaked
*4 cups fresh spinach, roughly chopped
*1/2 teaspoon red pepper flakes (adjust to taste)
*Zest and juice of 1 lemon
*Salt and pepper, to taste
*1/4 cup grated Parmesan cheese, plus more for serving
*Fresh basil or parsley, chopped, for garnish (optional)


Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (usually about 8-10 minutes). Reserve 1 cup of pasta water, then drain the pasta and set aside.
Sauté the Aromatics:
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
Stir in the flaked tuna and red pepper flakes, cooking for another 2-3 minutes until heated through.
Add Spinach and Combine:
Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes.
Stir in the lemon zest, lemon juice, and cooked pasta. Toss to combine, adding reserved pasta water as needed to reach the desired consistency.
Season with salt and pepper to taste. Stir in the grated Parmesan cheese until well mixed.
